Christophe Saintagne is a perfect example of the Ducasse generation. After his first experience at the Auberge du Vieux Logis in Conteville, just a stone’s throw from Pont-Audemer where he spent his childhood, and not far from Louviers where he attended the Jean-Baptiste Decrétot hospitality school, he moved to Paris to work at Amphyclès.
He completed his national service at the Élysée Palace and, in 1999, began his first chapter with Alain Ducasse. He first joined 59 Poincaré before moving to the Plaza Athénée, where he rose through the ranks and eventually became chef of Aux Lyonnais, the iconic bistro taken over by Ducasse.
In 2005, he stepped away to join Jean-François Piège at Les Ambassadeurs. In 2010, he returned to the Ducasse group for a second chapter, initially as Corporate Chef overseeing all the group’s restaurants, then, two years later, as Executive Chef of the Plaza Athénée restaurant, followed in 2014 by the role of Executive Chef at Le Meurice.
At the beginning of 2016, he embarked on a personal venture with the opening of his own restaurant, Papillon. Finally, in August 2024, he began a third Ducasse chapter as Consulting Chef for Ducasse Baccarat.
